Easy Rice and Chicken Recipe
Ingredients:
1 cup of white rice
2 cups of water
1 lb boneless, skinless chicken breasts, cut into small pieces
1 tbsp olive oil
1/2 onion, chopped
2 cloves of garlic, minced
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp dried oregano
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Rinse the rice under cold water and drain well. In a medium pot, combine the rice and 2 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for 18-20 minutes, or until the water is fully absorbed and the rice is tender.
While the rice is cooking, heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté for 2-3 minutes, or until translucent. Add the minced garlic and cook for another minute.
Add the chicken to the skillet and season with paprika, cumin, oregano, salt, and pepper. Cook for 7-10 minutes, or until the chicken is cooked through.
Serve the chicken over the cooked rice and garnish with fresh parsley. Enjoy!
